  • Canada; Why number one? A cultural mosaic has given Canada a huge advantage in the fact that the world is in our backyard. You can find every type of cuisine here. We have some amazing chefs and educators. Our management style is progressive, and we are often sought out to work abroad, being leaders in our industry. The typical Chef temperament really depends on training and nationality. We got them all here, happy, sad, angry, violent…all that fun stuff! • Switzerland; Not unlike Canadians in many ways. The cuisine is diverse, as are the people. management style is progressive/firm. Also a big influence on my generation, as many of us were mentored by Swiss Chefs.
Chef John Higgins
  • Scotland;

Chef John Higgins has cooked for the Queen at Buckingham Palace, on the Royal Yacht Britannia, for heads of state in Washington and for celebrities around the world.

At the beginning of his culinary career, he apprenticed at the Michelin Star Restaurant in Glasgow, Malmaison, and then worked at the world-famous, five-star luxury hotel in Scotland, Gleneagles.  For many years now, a resident chef of Canada, having brought many accolades to the culinary scene here. Scottish Chefs are also much sought after for there management style, excellent people and resource managers.
